About Freshies Food Cart in Silverthorne, Colorado

Hey there, I'm Molly Powell.

A few years ago, I found out I have a gluten intolerance and while the food industry is slowly catching up, it felt like most places still weren’t built with people like me (and so many others with allergies) in mind.

For years, I’d joke with my husband: “We really need a smoothie place around here.” Eventually, I got tired of just talking about it… so I decided to do something about it.

That’s how Freshies Food Cart was born.

At Freshies, we keep it simple:

Smoothies, açaí bowls, and juices made fresh to order

No fillers, no added sugar (just whole, mindfully sourced ingredients)

Always gluten-free, always allergy-aware

(and did I mention simply delicious, because eating well should never feel like a compromise)

🎃 Thank you all for a wonderful summer season! It’s clear that Summit County wants more healthy grab-and-go food options, and I’m so happy we could be a part of the solution! It’s been a labor of love getting this business off the ground and the response has been overwhelming.   🎃 That being said, October will be a time to rest and regroup. I can’t wait to start serving up soup and other yummy comforts as we get into the colder months. There are other irons in the fire that I’ll be sharing with you in the near future as well!

We can’t celebrate Labor Day without recognizing those who fought for (and continue to fight for) our labor rights. Not to mention the enslaved labor that helped build this country. Last but not least, we can’t recognize labor in America without highlighting immigration.

I’ve been in the workforce since I was 15. Every step of the way I’ve worked alongside immigrants. They have been nothing but the kindest and most hard working people around. This labor day it feels especially prudent that we honor those who are the true back bone of this country. Immigrants make America great!

Meet Molly!

Hey! I'm Molly, the owner and operator of Freshies Food Cart!

I moved to Summit County 8 years ago with a passion for snowboarding and the great outdoors.

I brought my massage skills to the county as well, and have been a licensed massage therapist for over 10 years now. After growing my roots here, I started a mobile massage business - Mollify. Eventually I moved to a brick and mortar business in downtown Dillon.

Over the years, I've noticed a lack of food options here, specifically ones that are quick and healthy. A couple of years ago, I discovered I had gluten intolerance, and that narrowed my options down even further.

This led to doing a lot of cooking for myself at home. Something I would often make for myself were smoothies and juices. I would test out different smoothie combos and protein powders before and after my workouts. I loved making different concoctions with my juicer as well, especially when I was feeling under the weather.

Eventually, I began to imagine what it would look like to have a smoothie business here. Ever so often I would bring up this dream with my, now husband. It got to the point where we both realized this dream wasn't going away.

Eventually the dream began to take shape into reality, and the idea of a smoothie & juice food truck or trailer seemed like a viable option. The first iteration of this was Mojo Juice.

After some tough lessons, and a lot of hard work what was originally Mojo Juice has now evolved into Freshies Food Cart. The community has had an overwhelmingly positive response to this business, and I could not be more grateful.

I'm excited to continue serving up smoothies and juices, and hoping to continue with soups (and more) in the fall and winter.
